I'm in northern ireland so I can't advise you what to see in the republic of ireland, although northern irelands nicer with more interest and friendlier people.
If your in around belfast there is the titanic quarter with details and artefacts about the titanic, its very good but costly.
We have bus tours around the city where you can check out the murals from the troubles here on both sides of the sectarian divide, an hour or so's drive you can see one of the wonders of the world the giants causeway, theres loads to check out mate, and I don't know what interests you have

The only thing I will say is that you have no option where I come from, you are "born" a rangers fan, the same goes for celtic fans
These are true fans of clubs, not ones that decided to support a club simply because it was winning things on the tv, or because it's part of a marketing campaign across the pond somewhere.
Growing up most of your friends are based around which team you support, as you get older you drink more with the fans of the club you support, it's a way of life around here, not just solely based on religion as you are trying to point out, it's generations of family all supporting the same team and bringing you up the same way.
Football is a way of life around our parts of the country everyday of the week, not just on a Saturday afternoon
